I wasn’t feeling well this afternoon, but couldn’t seem to fall asleep. I ended up spending a couple of hours perusing Pinterest and my favourite food blogs for vegan Valentine’s Day treats. I’m single this year but I have fun plans with a friend, and I don’t mind an excuse to go a little bit overboard with the sweets.
I wanted to share some of my favourite recipes that I’ve found. I’ve tried a few of them before, but most of them are new to me. Some of them are pretty healthy, while others are incredibly sugar-laden. ;) Even though I have so many projects on the go, I hope to find time to try making one or two of them this weekend …

Meghan’s Super Chocolate Treats from Making Love in the Kitchen. Making these was my introduction to lucuma, and now I’m hooked! It’s delicate and sweet and quite unique.
And for us single ladies, there are Katie’s Red Velvet Pancakes for One; healthy and delicious.
