Giveaway: Happy Herbivore Light & Lean

I got my hands on a copy of Happy Herbivore Light & Lean last week and have become instantly smitten. Now Lindsay’s kindly offered to give a copy to one lucky winner.

The book contains over 150 low-calorie, fat-free, vegan recipes, as well as nutritional information, fitness tips, and a rundown of Lindsay’s personal workout routine.

Although it’s the perfect cookbook for anyone looking to transition to a plant-based diet or lose weight, I think it has a wider appeal as well. Each recipe is made from simple, wholesome ingredients and can be prepared in 30 minutes or less. I don’t avoid fat or animal products completely, but I still find the book wildly inspiring for putting together healthy, delicious meals even during my busy work weeks. I’ve already tried the peanut noodles and yellow curry dal, both of which were really tasty. I’ve decided to make to rely on HLL heavily for my meal planning over the next month, as I try to eat more or less healthfully throughout the holiday season. I’ll be trying Lindsay’s workout plans as well, since I have a few fitness goals that I’m working towards.

  2. Oh my, my favorite recipe… that’s so hard, but I guess pizza dough, haha. I love pizza, and you can change it up so easily I never tire of it!

  3. At the moment my fave recipe is ginger baked tofu. I make a big batch and eat it for days. Yummers.

  4. I’ve been a vegetarian for a little over a year, and more and more I am finding myself gravitating towards vegan cuisine. This book would be a huge help in gradually veganizing my life.

  5. This book is just what I’ve been looking for! I love to eat pad Thai, and would love to learn to make it!
